Green tea and matcha originate from the same plant, Camellia sinensis, but they deliver entirely different experiences. Standard green tea is an infusion, made by steeping dried leaves in hot water before the leaves are discarded. Matcha, however, is a finely ground powder of the entire tea leaf, which is whisked directly into a liquid and fully consumed. The tea leaf’s journey diverges significantly before harvest. After harvesting, the leaves are steamed or pan-fired to prevent oxidation, rolled, and then dried, remaining in their whole-leaf form for steeping.

Once picked, the leaves destined for matcha are steamed, dried, and have their stems and veins removed, resulting in a product called tencha. This tencha is then stone-ground into a fine powder, a labor-intensive and time-consuming process. Because the consumer ingests the entire powder, matcha delivers a more concentrated dose of the leaf’s total compounds than steeped tea.

Moving beyond the science, the choice often comes down to personal preference for taste, texture, and cost. Standard green tea is characterized by its light, clear, and delicate flavor, ranging from grassy to floral depending on the variety. Matcha presents a more complex and intense sensory experience, defined by a rich, vegetal, and savory umami flavor due to the high amino acid content. Because the finely ground powder is suspended in the liquid, the resulting beverage has a thick, velvety, and frothy texture, especially when prepared traditionally with a whisk. This difference requires a specific preparation method, often involving a bamboo whisk and bowl, to fully integrate the powder.

The distinction in preparation also affects versatility. The powder form of matcha allows it to be easily incorporated into lattes, smoothies, baked goods, and other culinary applications.
