The plant is usually mature enough to begin the flowering process around 70 to 85 days after germination.
Before the classic yellow flowers appear, the plant will show distinct physical signs that bolting is imminent. The main central stem will suddenly shoot up vertically, becoming thicker and taller than the surrounding foliage. The plant’s energy is concentrated on this rapid height gain, which causes the feathery leaves to become smaller and more sparse.
The flowering structure itself is an umbel, which is an umbrella-shaped cluster of tiny yellow flowers. For gardeners seeking a continuous supply of fresh leaves, the appearance of this flower stalk is a signal that the leaf harvest from that plant is quickly ending. Managing Dill for Leaf or Seed Harvest
The management strategy for dill depends entirely on whether the gardener prioritizes the leafy herb or the mature seeds. For maximizing the leaf harvest, the main goal is to delay the onset of flowering for as long as possible. This can be achieved by providing consistent moisture and using mulch to keep the soil cool and reduce temperature fluctuations around the roots.
Another technique is to proactively cut back the top center growth, or pinch out the flower buds as soon as they are visible.
