Solubility in water describes a substance’s (solute) capacity to uniformly disperse within water (solvent), forming a homogeneous solution. The solute’s particles spread evenly, appearing to disappear. This interaction is fundamental to many processes.

Water’s ability to dissolve many substances stems from its distinct molecular structure. A water molecule (H₂O) has one oxygen atom bonded to two hydrogen atoms in a bent shape. This creates an uneven electrical charge distribution, making water polar. The oxygen atom attracts electrons more strongly, gaining a slight negative charge, while hydrogen atoms develop slight positive charges.
Water’s polarity allows it to interact with other charged or polar molecules. Positive regions are attracted to negative charges, and negative regions to positive charges. This “like dissolves like” principle explains why water dissolves polar compounds and ionic substances. For instance, when salt (an ionic compound) is added, water molecules surround sodium and chloride ions, pulling them apart and dispersing them throughout the solution.
Water’s polarity creates a “hydration shell” around dissolved particles, keeping them separated. Nonpolar substances, like oils and fats, lack distinct charges. Water molecules are more attracted to each other, so nonpolar substances do not dissolve well and tend to clump or form separate layers.

Pressure also plays a role, particularly for gases dissolving in liquids. Increasing pressure above a liquid increases gas solubility. This principle is utilized in carbonated drink production, where carbon dioxide is dissolved under high pressure.
Particle size, or surface area, influences the rate of dissolution, not overall solubility. Smaller particles, with more surface area exposed, dissolve more quickly. Breaking a solute into smaller pieces speeds up the process, though the total amount that can dissolve remains the same.

Cleaning processes utilize solubility principles. Soaps and detergents bridge the gap between water and oily dirt. They contain molecules with water-attracting (hydrophilic) and oil-attracting (hydrophobic) parts, allowing them to surround and lift nonpolar grease into polar water, effectively dissolving it. This mechanism enables water to clean surfaces that would otherwise repel it.
In biology and medicine, solubility is important for life processes. Nutrients from food must dissolve in water-based fluids for absorption and transport to cells. Many medications dissolve in body fluids to be effective, reaching target sites. A drug’s precise solubility influences its dosage and administration.
