Color Variations in Salmon

Coho salmon typically display a pink or orange hue, often less intense than sockeye. Chum salmon, by contrast, tend to have paler, barely pink flesh.

Significant color differences also exist between wild and farmed salmon. Wild salmon’s color is a direct result of their natural, varied diet in the ocean. Farmed salmon, however, are raised on controlled diets and would naturally have gray or beige flesh without dietary supplementation. To achieve the desired pink or orange color, astaxanthin, either synthetic or derived from natural sources like yeast or microalgae, is added to their feed. This practice ensures farmed salmon develop the coloration consumers expect, mimicking the appearance of their wild counterparts.
