The Nature of Duck Fat

Duck meat, especially with the skin on, contains a noticeable amount of fat concentrated just beneath the skin. Compared to other poultry like chicken or turkey, duck typically has a higher fat content, with raw duck meat and skin containing around 28.4 grams of fat per 100 grams. This fat, primarily in the skin, can be rendered or removed during cooking.

The composition of duck fat is noteworthy. It is rich in monounsaturated fatty acids (MUFAs), making up approximately 49% to 52% of its total fat. Cooking Strategies for Duck Fat

Several cooking strategies help manage duck fat content while enjoying its distinct flavor. Rendering the fat is a common technique, involving slowly heating duck skin and fat in a pan until it melts away, leaving crispy skin. This process can take 45 minutes to an hour on the stovetop. Starting with a small amount of water in the pan helps prevent the fat from burning during rendering.

To reduce fat consumption, the skin can be completely removed from the duck meat before cooking or eating. If crispy skin is desired, scoring the skin before cooking allows fat to render out more effectively. Cooking duck breast skin-side down in a cold pan over low heat also helps render fat slowly, resulting in crispier skin and less fat in the finished dish.
