Selecting Containers, Soil, and Pepper Varieties

The choice of container size directly impacts the health and potential yield of the pepper plant. For smaller varieties like Thai chilies, a minimum of a three-gallon container is recommended. Most standard peppers, including bell peppers and jalapeños, require at least a five-gallon size to thrive. Overwatering and underwatering are the most common causes of failure, making consistent moisture management important. To check the moisture level, use the “knuckle test,” pushing a finger two inches deep into the soil. The advantage of container growing is the ability to move the pots to capture maximum sun or protect plants from harsh weather. During periods of extreme heat (above 90°F), moving the plants into partial afternoon shade can prevent flower drop and sunscald on the developing fruit.

Taller or heavy-fruiting pepper varieties often require physical support to prevent stems from breaking under the weight of the fruit. Staking or caging should be done early, before the root system becomes fully established, to avoid damaging the roots when placing supports. Blossom end rot is a common physiological disorder, presenting as a dark, sunken patch on the bottom of the developing fruit. Allowing them to remain on the plant until they develop their mature color (red, yellow, or orange) increases their sugar content and sweetness. Hot peppers gain their full heat intensity and characteristic flavor only when fully ripened to their final color.

The correct technique for removing the fruit is important to prevent damage to the plant, which has brittle stems. Instead of pulling the pepper off by hand, use clean, sharp shears or scissors to cut the stem about one inch above the fruit.
