Calcium is largely immobile within the plant, meaning it must be constantly supplied to new growth. Disruptions in water uptake—even with sufficient soil calcium—can cause the nutrient to fail to reach the fruit.
By ensuring a consistent supply of readily available calcium near the roots, gypsum helps stabilize cell membranes and supports the development of strong fruit walls. The calcium ions in gypsum also help to improve the physical structure of heavy clay soils through a process called flocculation. This action causes tiny clay particles to clump together, creating larger pore spaces for better water infiltration, root aeration, and deeper root penetration.
Gypsum also provides a source of sulfate, a form of sulfur that plants can easily absorb. Sulfur plays an important part in the formation of proteins, enzymes, and vitamins. Assessing the Need for Gypsum Application

The distinction between gypsum and garden lime (calcium carbonate) is important. Lime actively raises the soil pH, and applying it to a garden with already neutral or alkaline soil can push the pH too high, preventing the uptake of other nutrients. Since gypsum is a neutral salt, it provides calcium without significantly altering the existing pH.
