These specialty varieties mature quickest. ‘Parisian Market’ is sometimes ready in as few as 50 to 60 days, yielding small, round, or stubby roots. The ‘Little Finger’ variety, a type of Nantes carrot, is typically ready in 55 to 65 days, producing smooth, cylindrical roots about three to four inches long. These compact types are advantageous for gardeners dealing with heavy or shallow soil that might impede the growth of longer varieties.

The second method involves pulling standard varieties, such as ‘Nantes’ or ‘Danvers,’ before they reach full mature size. For example, ‘Danvers’ can be harvested starting at 55 days, while ‘Nantes’ varieties, which normally take 65 to 75 days to fully mature, can be pulled early. This technique, sometimes called “harvest thinning,” involves removing every other seedling once the roots have reached a desired half-inch to three-quarter-inch diameter. Optimizing Soil and Environment for Rapid Growth
