Size is primarily assessed by length and weight, as these metrics determine suitability for processing, stuffing, or slicing. Growers look for a deep, glossy green color and a firm texture as indicators of full size and market readiness. A common sign of a fully developed pepper is “corking,” where small, brown, scar-like lines appear on the skin.
