Baking soda is formally known as sodium bicarbonate, with the chemical formula NaHCO3. Solubility describes the maximum amount of a substance (the solute) that can dissolve in a given amount of another substance (the solvent) at a specific temperature. Sodium bicarbonate is classified as highly soluble, meaning a significant amount can be incorporated into a water solution.
At room temperature (20°C), approximately 96 grams of baking soda can dissolve completely in one liter of water. This high solubility results from the compound’s structure. Sodium bicarbonate is an ionic compound, made of positively charged sodium ions (Na+) and negatively charged bicarbonate ions (HCO3-). When mixed with water, the strong attraction between water molecules and these ions overcomes the electrostatic forces holding the solid compound together.
How Water Dissolves Baking Soda
Water molecules are electrically polar, having slightly negative and positive charges. This polarity is the primary driver of dissolution. As water molecules cluster around the solid baking soda, they exert a pulling force strong enough to separate the sodium and bicarbonate ions from the crystal structure. The solubility of sodium bicarbonate is directly influenced by the temperature of the water. As temperature increases, the kinetic energy of the water molecules rises, making them more effective at disrupting the ionic bonds. For example, the solubility nearly doubles from 96 grams per liter at 20°C to 165 grams per liter at 60°C. However, like all soluble compounds, baking soda has a saturation limit, meaning that once the solution holds the maximum amount of solute, any additional powder will remain undissolved.
This readily dissolving property enables many practical uses. When dissolved in water, it acts as a mild alkali, which allows it to neutralize acids effectively. This reaction is the basis of its function as an antacid to relieve stomach acid or as a cleaning agent to help remove acidic stains. The dissolved solution is also an excellent deodorizer because the bicarbonate ions can absorb and neutralize both acidic and basic odor molecules. A diluted solution is often used as a simple mouthwash to neutralize acids and freshen breath.
