Common Sole: A Flatfish and Culinary Delicacy

The common sole, also known as Dover sole or black sole (Solea solea), is a recognized flatfish species. A notable member of the Soleidae family, it is known for its distinct shape and presence in various marine environments. It holds particular significance ecologically within its habitat and commercially as a sought-after food source.

Distinctive Features and Aquatic Environment

The common sole has a strongly compressed, oval-shaped body, with small eyes positioned closely together on its right side. Its coloration typically ranges from grey to reddish-brown on the upper side, often with dark spots, while its underside remains white. Coloration can vary with the substratum. The fish can reach a maximum length of about 70 cm, though individuals commonly measure between 30 and 40 cm.

The species prefers shallow waters, 10 to 60 meters deep, inhabiting sandy or muddy seafloors where it often partially buries itself. While generally found in shallower areas, it can be present at depths up to 200 meters, especially during winter when it moves to warmer, deeper waters. Its geographical distribution spans the Eastern Atlantic Ocean, from southern Norway to Senegal, and extends across nearly all of the Mediterranean Sea and into the North Sea.

Life Cycle and Feeding Habits

The common sole reaches sexual maturity between three and five years, at 25 to 30 cm. Spawning occurs in shallow coastal waters (6-12°C), primarily between February and May, though earlier in warmer regions like the Mediterranean. Eggs incubate for about five days, and the larval phase lasts 35 days.

Common sole larvae initially resemble round fish, but undergo metamorphosis at about one centimeter, with an eye migrating to the same side of the head, transforming them into flatfish. Juveniles reside in shallow coastal nurseries for two to three years before migrating to deeper waters. Adults feed at night on small crustaceans, worms, and soft-shelled bivalves, often lurking half-buried in sand to ambush prey.
