Baby bok choy varieties, such as ‘Shanghai Green’ or ‘Toy Choy’, are typically harvested when small and tender. ‘Toy Choy’ specifically grows to about 5 inches tall. In contrast, standard or mature bok choy varieties, including ‘Canton’ or ‘Joi Choi’, are cultivated to reach a larger size. Full-sized bok choy can grow to 12 to 18 inches tall and 7 to 15 centimeters in diameter.

Beyond genetic predisposition, several environmental and cultural factors impact bok choy size.
