Sodium citrate also functions as an emulsifier, allowing oil and water to mix smoothly in products like processed cheese, preventing fat separation and ensuring a consistent, creamy texture upon melting.

In the medical field, sodium citrate plays several significant roles. It is widely recognized as an anticoagulant, particularly in blood transfusions and blood collection tubes. Its anticoagulant effect stems from its ability to chelate calcium ions in the blood, which are necessary for clotting. By binding these ions, sodium citrate prevents blood from clotting, allowing for safe storage and handling.

Sodium citrate is also used as an alkalinizing agent to neutralize excess acid in the body.
