Pigeon Egg: Nesting, What to Do, and Culinary Uses

Pigeons are a common sight in urban and rural landscapes, yet their eggs remain largely unseen. Understanding pigeon eggs, from their physical characteristics to their role in different cultures, offers a deeper appreciation for these adaptable creatures.

Physical Characteristics and Nesting Habits

Pigeon eggs typically have a smooth texture and a glossy white color, sometimes appearing slightly off-white. They are relatively small, measuring approximately 3 centimeters (1.2 inches) in length and 2 centimeters (0.8 inches) in width. These eggs are laid in simple, often flimsy nests constructed from twigs, grasses, and various debris.

Pigeons are resourceful in choosing nesting sites, often opting for hidden or elevated locations that provide some protection. Common spots include building ledges, bridge structures, steeples, attics, and even inside abandoned barns. The male pigeon usually gathers nesting materials, while the female arranges them into a crude platform. A clutch usually consists of two eggs, though occasionally a single egg may be laid.

Incubation and Hatching Process

After mating, female pigeons lay their eggs within 8 to 12 days. The incubation period for pigeon eggs is approximately 18 days, though it can range from 16 to 19 days. Both the male and female pigeons share the responsibility of incubating the eggs, taking turns to keep them warm.

When the eggs hatch, the newly emerged chicks are referred to as “squabs.” Squabs are helpless at birth, initially lacking down feathers. Both parent pigeons feed their young a unique substance known as “crop milk,” a secretion from their crops that provides essential nutrients. Squabs remain in the nest for about four to six weeks, developing their feathers and strength before they are ready to fledge.

What to Do if You Find a Pigeon Egg

If you encounter a pigeon egg, the best action is to observe it from a distance without interfering. Pigeons are resilient and dedicated parents, and they often do not abandon their nests unless significantly disturbed. Directly touching or moving the egg can introduce human scent or damage the delicate shell, potentially leading to abandonment.

An egg found on the ground is unlikely to be viable, as it has likely fallen from a nest. While some native bird species are protected by law, feral rock pigeons, common in urban areas, do not have the same legal protections. Even so, it is considered best practice to leave the egg undisturbed and allow nature to take its course.

Culinary Use of Pigeon Eggs

Pigeon eggs are edible and possess a distinct flavor profile. They are described as having a richer taste than chicken eggs, with buttery and slightly gamey notes. When cooked, their whites may not fully whiten, sometimes remaining translucent.

Due to their smaller size, two to three pigeon eggs are equivalent to one standard chicken egg in volume. Nutritionally, pigeon eggs are a good source of protein, containing vitamins like B12 and D, and minerals such as iron and selenium. While not as widely available as chicken or duck eggs, pigeon eggs are considered a delicacy in certain cuisines, particularly in parts of Asia, including Chinese and Vietnamese dishes, where they are used in soups or steamed preparations.
