Two main fermentation methods are employed: submerged fermentation (microorganisms grow in liquid broth) and solid-state fermentation (they grow on a solid substrate like wheat bran). Microbial sources are preferred for enzyme production due to their economic scalability and amenability to genetic modification. After fermentation, enzymes are recovered and purified.
